BBQ Bean Sloppy Joes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1/4 cup vegetable broth
- 3 cups cooked brown rice
- 2 15 ounce cans pinto beans, rinsed (option: substitute 1 can of pinto with black or white beans)
- 2 cups barbecue sauce
- 1 1/2 tablespoons chili powder
- Whole Wheat Hamburger Buns
Place the onion and bell pepper in a non-stick pan with the vegetable broth. Cook about 3 minutes, stirring occasionally until vegetables soften slightly. Add remaining ingredients (except buns) and cook for about 12 minutes until well heated.
Serves 6 to 8.
