BBQ Bean Sloppy Joes

  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1/4 cup vegetable broth
  • 3 cups cooked brown rice
  • 2 15 ounce cans pinto beans, rinsed (option: substitute 1 can of pinto with black or white beans)
  • 2 cups barbecue sauce
  • 1 1/2 tablespoons chili powder
  • Whole Wheat Hamburger Buns

Place the onion and bell pepper in a non-stick pan with the vegetable broth. Cook about 3 minutes, stirring occasionally until vegetables soften slightly. Add remaining ingredients (except buns) and cook for about 12 minutes until well heated.

Serves 6 to 8.
