Easter Carrot Cake

  • 2 cups sugar
  • 4 eggs beaten
  • 1 ¼ cup oil
Combine until smooth.
  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
Combine in a separate bowl, and slowly add to mixture above.
  • 2 jars junior carrots
  • 1 tsp. vanilla
Gently fold in to mixture.

Bake at 350° for 20 - 25 minutes.

Option: Grate 3-4 carrots in substitution for the jars of junior carrots. May also substitute 1¼ cup oil with 1 cup Applesauce and ¼ cup oil.
