Easter Carrot Cake
- 2 cups sugar
- 4 eggs beaten
- 1 ¼ cup oil
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 jars junior carrots
- 1 tsp. vanilla
Bake at 350° for 20 - 25 minutes.
Option: Grate 3-4 carrots in substitution for the jars of junior carrots. May also substitute 1¼ cup oil with 1 cup Applesauce and ¼ cup oil.
