Homemade Granola

  • 7 C. oats
  • 1 C. sweetened coconut
  • 1 C. sliced almonds
  • ½ C. chopped pecans
  • 1 C. raisins or other dried fruit
  • 2 tsp. cinnamon
  • ½ C. canola oil
  • ½ C. water
  • 2/3 C. honey or molasses
  • 1tsp. salt
  • 1 tsp. vanilla

Preheat oven to 275°. Mix dry ingredients in a large bowl. In a medium sauce pan, warm oil, water, honey, and salt. Add vanilla just before pouring warmed liquid over dry ingredients. Mix thoroughly. Pour mixture onto a jelly roll pan and cook for 1 hour stirring occasionally.

Other additions: peanuts, sunflower seeds, walnuts, dates
