Vegetable Medley
This recipe is an excellent source of vegetables in your diet. Also excellent for adrenal fatigue or during a detoxification diet!
Ingredients:
- 5-6 cups diced vegetables of your choice
- Red Pepper
- Onion
- Zucchini
- Yellow Squash
- Butternut Squash
- ¼ cup Olive Oil
- 3-5 cloves Garlic (crushed)
- 1 tsp. Italian Seasoning
- ¼ tsp. Salt (or to taste)
- ¼ tsp. Pepper
Preheat oven to 425°.
Mix Olive Oil, Garlic, Italian Seasoning, Salt, and Pepper.
Place vegetables on pan. Drizzle Olive Oil mixture over vegetables.
Place pan on middle rack of oven.
Bake 18 – 20 minutes until vegetables are crisp and tender.
